Speck is a traditional salami from the Trentino Alto Adige Italian region. The first references to this salami date back to 1200, however, the term Speck, a term of German origins that refers to the lard, was spread in the 18th century.

It is a salami typically produced in the Trentine farmhouses, where the farmers preserved it to guarantee food stocks during the cold winters.

The realization of the salami blended different traditions: the smoking tradition, technique that originated from the north and the seasoning tradition, a mediterranean technique.

PREPARATION

Cut the pumpkin in dices and sauté it with the onion in a pan with olive oil.

Blend the pumpkin and onion until you obtain a creamy texture.

Start with cooking the rice, first toast it with a little bit of olive oil and then add the broth and cook the rice in it.

Once cooked, add the pumpkin cream and the gorgonzola cheese cut in dices.

Stir and serve.

Ingredients:

1 Packet of yeast
1 Packet of Vanilla
2 Eggs
1 Glass of Milk
120 gr of Butter
70 gr of Brown Sugar
2 Tablespoons of Cinnamon

PREPARATION

Put the milk on the stove and then put two spoons of flour and yeast mixing them slowly.

In a mixer add the previous warmed milk, the flour and finally add the eggs.

Add 70 gr of butter slowly.

Let the dough rest for about 2 hours.

In a pan melt the rest of the butter with brown sugar and cinnamon and let it rest.

Once two hours have passed start working the dough on a pastry board.

Create a square with the dough and spread on top of it the sugar and butter sauce, roll it, cut it and try obtaining a fortnight of rolls.

Place them in a lined baking tray and cook them at 200° C for about 15 minutes.

Serve the warm cinnamon rolls.

Discovering the mantuan pumpkin tortelli

The pumpkin tortelli were born in northern Italy around the Renaissance period, making them a very old recipe. The traditional pumpkin filling came after the introduction of the pumpkin, by the Americans, finding North-Italy as one of the best places to grow and spread.

This meal was born as a poor meal, but the Gonzaga Family made it into a fine noble dish by adding next to the pumpkin, the strong flavour of the Mantuan mustard and both the sweetness and the crunchiness of the amaretti cookies, both very pricey at the time.

Anciently, the meatless filling made the pumpkin tortelli often consumed for the religious fasting period. Nowadays, they are the protagonists of the holidays season, especially consumed around Christmas Eve.

Half a cup of Marsala (liqueur)

PREPARATION

For the mascarpone cream mix the sugar and the egg yolks.

Mix until obtaining a smooth texture and then slowly add the mascarpone cheese and then mix thoroughly.

For the eggnog cream mix the sugar and the egg yolks and half a glass of Marsala Liqueur.

Serve in the cups by alternating between Mascarpone cream and the eggnog cream.

Put the vegetables together with the breadcrumbs and the parmigiano in a bowl and mix them well.

Create the burgers with your hands and place them in a lined baking tray.

Add a drizzle of olive oil on the burger and cook them in the oven at 200° for about 10 minutes.
