For the lasagne:
250 g of egg pastry for lasagne
500 ml of béchamel
Salt and Pepper
For the pesto alla Genovese:
30 g of Pine nuts
50 g of basil leaves
2 Cloves of garlic
1/2 tea spoon of rock salt

PREPARATION

Directions:

Clean the basil leaves using a damp cloth. Put the cloves of garlic in the mortar adding a pinch of rock salt. Start to crush the leaves and the garlic until obtaining a cream. Add another pinch of rock salt. Crush the mixture again until obtaining a mush. Add the pine nuts and crush. Add gradually the cheese with a spoon. Lastly, add the extra virgin olive oil, blend and the pesto is ready.

For what it concerns the preparation of the lasagne, put a spoonful of béchamel on a Pyrex plate, add the first layer of egg pastry and cover it with another spoonful of béchamel. Add the pesto alla Genovese and then the buffalo ricotta. If the ricotta is too hard, dilute it with a little milk. Add some grated cheese. Repeat the procedure until obtaining at least 5 layers of lasagna. Lastly, cover the last layer of lasagna with just some béchamel and some pesto alla Genovese. Cottura : portate il forno a 180°C. Dopo 10 minuti infornate le lasagne e lasciatele cuocere per circa 40 min.

Cooking:

Adjust the temperature of the oven to 180°C. After 10 Minutes put the lasagna in the oven and let it bake for about 40 Minutes.

Ingredients:

500 g of Tipico IT's Dolce Nuvola
80 g of sugar
4 Eggs
250 g of biscuits (Savoiardi type)
1 cup of espresso coffee
1 glass of Marsala (liqueur)
Sugar free cocoa powder
Flakes of dark chocolate

PREPARATION

Beat the egg yolks until stiff with the sugar up to obtain a white and light mixture. You have to work the Dolce Nuvola with a wooden spoon up to obtain a smooth cream, possibly without any lump. Then you have to add the mixture of eggs and sugar to the Dolce Nuvola, trying to amalgamate them. Beat the albumen until stiff with a pinch of salt and then add the result to the Dolce Nuvola and eggs cream. Then you have to mix the Marsala to the room-temperature coffee.

Add two water spoons. Dunk the Savoiardi biscuits in the coffee, trying not to soak them excessively. Cover the bottom of the Pyrex dish with a layer of Savoiardi. Then you have to spread a layer of Dolce Nuvola cream leveling with a spatula. Then go on with a second layer of biscuits and cover it with the cream. At the end you have to sprinkle the sugar free cocoa powder and the dark chocolate flakes on the top of the dessert.

Saffran Tagliatelle with sausage and Bagòss

60 g Butter
2 Bags of Saffron powder
2 Small branches of Rosemary
1 Piece of Shallot
As required Vegetable broth
As required Salt and pepper

PREPARATION

Melt the butter in a pot, unite the minced shallot and lightly fry. Crumble the sausage, pour the product in the pot and add a little bit of hot broth. Perfume with the rosemary, add the salt and the pepper and continue the cooking.

Unite the cheeses: the sliced Bagòss (without the crust) and the stracchino in pieces. Continue the cooking at moderate heat until the cheeses turn liquid. If it is necessary, you can add a little bit of broth. Add the saffron powder to the salted and hot water, cook the Tagliatelle and drain the pasta al dente.

Mostarda mantovana with quinces

Ingredients:

1 kg quinces
500 g Sugar
1 Lemon
12 drops of mustard oil

PREPARATION

Peel the quinces, remove the core and cut them in 4 slices. Cut the slices in small pieces (3-4 cm thick).

Pour the sugar and the juice of half a lemon over the quinces. Stir and allow to stand for 24 hours, stirring every 3-4 hours.

After 24 hours take only the liquid released by the quinces and pour it into a small pot. Put the pot on at low heat and bring the liquid to the boil, stirring continuously, in order not to let the liquid stick. Once boiled, keep stirring and let it simmer for 4-5 minutes. Put out the fire and pour the hot liquid over the quinces. Leave to stand for 24 hours and repeat the procedure.

After additional 24 hours, take both the juice and the quinces and boil them inside a small pot, stirring continuously. Let simmer for 15-20 minutes, until the liquid gets thick. Put out the fire and leave to cool.

Once cooled, add the mustard oil to taste (about 12-13 drops for each kg of mostarda).

Close the mostarda in airtight jars.

3 potatoes

PREPARATION

Boil the unpeeled potatoes in unsalted water. Drain and leave to cool. Peel the potatoes and dice them. Salt to taste

Cut the onion in thin slices and put it in cold water for 10 minutes. Drain thoroughly

Cut the smoked arctic char in small pieces or slices

Put the potatoes, the sliced onion, the arctic char and the parsley in a bowl. Season to taste with salt, pepper and extra virgin olive oil

Leave to stand for a few hours, in order to enhance the taste and serve

Ingredients:

200 g of Durum wheat bread
200 g of Tipico IT's Dolce Nuvola
200 g of figs
Salt and Pepper
5 g of Chives
20 g of acacia Honey

PREPARATION

To prepare the bruschette with figs, sweet Prosciutto Crudo and Dolce Nuvola cheese, start with the preparation of the bread. Cut the loaf of bread in 4 slices of the same thickness. Heat the grill up and toast the bread for a few minutes on each side.

Continue with the preparation of the Dolce nuvola, an artisanal low-fat cheese produced with fresh milk and salt. Wash the chives and chop it finely. Put the chopped chives and the Dolce Nuvola in a bowl and stir, in order to blend all the ingredients. Adjust with salt and pepper

Continue with the preparation of the figs: wash them, cut them in a half and each half in three parts. Drizzle the acacia honey on the figs. Put the figs on the grill and cook them for a few seconds on each side by using the tongs

Take a slice of bread and spread the cream of Dolce Nuvola and chives on it. Lay 2-3 slices of sweet Prosciutto Crudo in the middle of the slice of bread and the figs all around. Serve

Ingredients:

440 g Tagliatelle (Freshly made Egg Pasta)
300 g Stracciatella
300 g Smoked alpine char
50 g Onion
Salt and Pepper
Parsley
Aromatic herbs

PREPARATION

You have to cut into small pieces the smoked alpine char.

Put a non-stick pan on the flame, cut the onion into very fine pieces and put them into the pan together with a spot of water. Let the onion slightly brown.

When the onion will become colorful, you have to add the char and to let it cook for a little while. Then you have to add the stracciatella and some cooking water little by little because the char is inclined to dry itself.

In the meantime you have to cook the tagliatelle in abundant salted water and when they’re ready you have to strain the pasta and to put it with the sauce. Then you have to add salt and pepper.

Before serving the pasta you have to garnish it with parsley and aromatic herbs.

400 g Pasta
40 g Dried tomatoes
300 g Eggplants
2 Spring onions
1 Garlic clove
4 g Red chilli
60 g Pine nuts
4 tbsp Extra virgin olive oil
20 g Basil
50 g Fiore Sardo cheese D.O.P.

PREPARATION

First put the dried tomatoes in a bowl and soak them in hot water for 5 minutes. When they have softened, cut them into strips and set aside.

Then cut the aubergines into washers about 3 mm thick. Chop the garlic, slice the onions and chilli and put everything in a large pan with 4 tablespoons of oil. Fry for a couple of minutes and then add the aubergines. Then add the dried tomatoes in strips and a ladle of hot water; leave to cook.

When the aubergines have softened, turn off the heat and add the basil leaves coarsely chopped with your fingers.

Then cook the pasta in salted water and in the meantime toast the pine nuts in a non-stick pan without adding any seasoning.

Once the pasta is cooked, drain it leaving some cooking water inside and pour it into the pan. Stir-fry for a minute to mix well, add the toasted pine nuts and finally the grated Fiore Sardo DOP. Stir well and serve hot or cold pasta according to your preference.

Ingredients:

200 g flour plus the one for the pastry board
3 eggs yolks
1 pinch grated nutmeg
6 tbsp extra virgin olive oil
1 fresh red-hot pepper cut into small slices
fresh basil to taste
225 g fresh buffalo ricotta cheese
30 g grated parmesan cheese
tomato sauce
salt and freshly ground or crushed black pepper to taste

PREPARATION

Pour into a bowl the flour, ricotta, egg yolks, parmesan cheese, nutmeg, a little salt and pepper, and mix everything together to make a soft and smooth pastry.

Turn the pastry over on the floured pastry board and work it for 3-5 minutes.

Take some pieces of the pastry and roll them up to make some kind of little sausages, which you will then cut into pieces about 2 cm long.

In the meantime, prepare the sauce frying for a minute the oil with the garlic and the pepper in pan, then remove from the heat and add the tomato sauce.

Put back on the fire, add salt and simmer for five minutes.

Cook the gnocchi in abundant boiling water.

Drain the gnocchi from the pot with a skimmer and put them in the pan with the tomato sauce.

Serve now with fresh basil decoration. If you want you can add a little grated parmesan cheese.

Spaghetti alla Carbonara

Ingredients:

350 g Spaghetti
150 g Guanciale
6 Tuorli di uova medie
50 g Pecorino romano
Sale q.b.
Pepe nero q.b.

PREPARATION

Per preparare gli spaghetti alla carbonara cominciate mettendo sul fuoco una pentola con l’acqua salata per cuocere la pasta. Nel frattempo eliminate la cotenna dal guanciale e tagliatelo prima a fette e poi a striscioline spesse circa 1cm. La cotenna avanzata potrà essere riutilizzata per insaporire altre preparazioni. Versate i pezzetti in una padella antiaderente e rosolate per circa 15 minuti a fiamma media, fate attenzione a non bruciarlo altrimenti rilascerà un aroma troppo forte.

Nel frattempo mettete gli spaghetti nell’acqua bollente e cuoceteli per il tempo indicato sulla confezione. Intanto versate i tuorli in una ciotola, aggiungete anche la maggior parte del pecorino previsto dalla ricetta. La parte restante vi servirà per guarnire la pasta.

Insaporite con il pepe nero, amalgamate tutto con una frusta a mano. Aggiungete un cucchiaio di acqua di cottura per diluire il composto e mescolate.

Intanto il guanciale sarà giunto a cottura, spegnete il fuoco e tenetelo da parte. Scolate la pasta al dente direttamente nel tegame con il guanciale e saltatela brevemente per insaporirla.

Togliete dal fuoco e versate il composto di uova e pecorino nel tegame, saltate la pasta per amalgamare e se dovesse risultare troppo asciutta potete aggiungere poca acqua di cottura. Servite subito gli spaghetti alla carbonara insaporendoli con il pecorino avanzato e il pepe nero macinato.
