2 Tipico IT's Fresh tomatoes
300 g of Tipico IT's Buffalo Mozzarella
Fresh basil
Oregano
Tipico IT’s Extra virgin olive oil

PREPARATION

First of all, wash and dry the tomatoes and cut them into 6-7 mm thick slices with the help of a fine-bladed knife. Then, place them on a wooden cutting board and sprinkle some salt on them.

Subsequently, take the mozzarella and cut it into slices with the same thickness of the tomato slices. Dab the mozzarella slices with a cotton cloth, so that you can absorb the water in excess.

Finally, assemble the dish alternating the tomato slices with the mozzarella ones and the fresh basil leaves. Then, sprinkle a pinch of dried oregano, some pepper and a drizzle of olive oil. Your Caprese is ready to be served and enjoyed immediately!

Ingredients:

For the shortcrust pastry
200 g of Cold butter from frdige
100 g of sugar
1 tsp of Yeast in powder for sweets
300 g of Tipico IT’s 00 Flour
2 Eggs
50 g of Almonds
For the ricotta cream
450 g of Tipico IT's Cow ricotta
50 g of sugar
100 g of Dark chocolate chips

PREPARATION

In order to prepare the ricotta and chocolate chips sbriciolata, in a bowl pour some flour and the cold butter cut into pieces. Mix well the ingredients with the help of your hands, until you obtain a sandy mixture.

Add the sugar, the entire eggs and the yeast in powder. Beat the mixture until the eggs are absorbed. At this point you will have obtained a sandy compound.

Now start with the ricotta cream preparation: in a bowl pour some ricotta and sugar and mix well with a spatula in order to amalgamate them well. Then, add the chocolate chips and mix.

Cover with some baking paper the base of a cake mould. Then add half of the sandy mixture by covering the base and the borders of the mould. Then add the ricotta and chocolate chips cream and spread it with a spatula in order to level it.

Now, cover the surface with the rest of the sandy mixture. In the and sprinkle it with almond flakes.

Bake your sbriciolata in preheated static oven at 180°C for 40 minutes. When baked, take it out and let your sbriciolata cool down. Then put it in the fridge and after some hours it will be ready to tasted.

350 g of Tipico IT's fresh pasta
2 Zucchini
100 g of Tipico IT's Pancetta
100 g of Tipico IT's Sweet gorgonzola
Tipico IT's Granetta di vacca
Tipico IT’s Extra virgin olive oil

PREPARATION

Put some water to boil for the pasta. On the other hand, wash and cut the zucchini into rings. Stir them fry with some oil and salt, until they become soft. Then add some hot water and blend with the help of an immersion blender until you obtain a smooth cream.

In another pan brown the pancetta with some oil.

Then take the gorgonzola cut into pieces and let it melt; if necessary, then add a ladle of the pasta cooking water.

In the meantime, drop the paccheri in the salted water; then, once cooked, drain them al dente and pour them in the pan, where previously you prepared the gorgonzola and pour on the top the zucchini cream.

Subsequently add the pancetta, a sprinkling of granetta di vacca and stir the pasta fry for some seconds in the pan. At this point, your pasta is ready to be enjoyed.

4 Round zucchini
150 g of Tipico IT’s Carnaroli Rice
Tipico IT’s Extra virgin olive oil
Fine salt
1 Shallot
100 g of Tipico IT's Buffalo Mozzarella

PREPARATION

First of all, wash well the zucchini under the water. Then, cut their upper part and with the help of a corer remove their pulp, that you will put aside in order to prepare the rice.v

Boil some slightly salted water and let the zucchini boil for about 15 minutes, so that they can be softened. After the time has passed, drain and let them cool down.

In the meantime, start the rice preparation: take the zucchini pulp, cut it finely and let it cool for 10 minutes in a pan with some oil and one shallot.

When the pulp will be softened, add the rice and mix well. At this point, add step by step some hot and salted water, until the rice will have reached an “al dente” cooking.

Subsequently, take the previously dug zucchini which by now will have cooled down, half-fill them with the prepared rice, then add a heart of mozzarella in each of them. Fill them with the remaining rice and add again some pieces of mozzarella.

Cover the zucchini with the previously cut caps and let them cook in a ventilated oven at 180°C for 20 minutes. Once cooked, serve them warm.

For the Zabaione cream
4 Egg yolks
75 g of Marsala
75 g of sugar
For the Mascarpone cream
250 ml of Tipico IT's fresh cream
250 g of Tipico IT’s Mascarpone
2 tbsp of sugar
100 g of Tipico IT's Amaretti
For garnishing
Blueberries

PREPARATION

1

First of all, start with the Zabaione cream preparation: in a bowl pour the four egg yolks with the sugar and start whipping with the electric whips until you obtain a light and fluffy mixture.

Then add half of the Marsala and continue mixing with the electric whips. Add the remaining Marsala and continue whipping until you obtain a clear and puffy mixture.

Pour some water in a little pan and place it on the heating. Put the bowl with your cream on the pan and cook with the “Bagnomaria” technique, mixing continuously from the bottom to the top with the help of a whip. The zabaione cream will be ready when it will have reached a temperature of 84°C, that is to say when it will have thickened, but in any case, it will remain fluid and not stationary.

At this point, your zabaione cream is ready, so turn off the heating and let it cool down.

Now start the preparation of the zabaione mousse: first of all, chop the amaretti, then start whipping 100ml of fresh cream.

After the moment that your zabaione cream will have cooled down, add 100 g of Mascarpone and mix gently in order to mix everything well. Add also the whipped cream mixing gently from the bottom to the top in order not to deflate the cream and continue like that until you have mixed it well. At this point your mousse is ready and place it in the fridge.

Now start with the mascarpone cream preparation: in a bowl work the left mascarpone with the sugar and the ground amaretti. Whip the left fresh cream and add it to the mascarpone mixture mixing gently. At this point your mascarpone cream is ready.

Now start composing your sweet dish: bring some dessert glasses and place some ground amaretti on the bottom, then pour a layer of mascarpone cream, then another layer of ground amaretti and finally a layer of zabaione mousse.

Put your dessert glasses in the fridge for 2-3 hours and when the time of serving comes, garnish the surface with blueberries.

For the fresh Passatelli

100 g of Tipico IT’s Granetta di vacca
Nutmeg
140 g of Tipico IT’s Breadcrumbs
Lemon zest

For the yellow confit cherry tomatoes
150 g of Tipico IT’s Yellow cherry tomatoes
25 g of sugar
35 g of Tipico IT’s Extra virgin olive oil
Fine salt
1 Clove of garlic
Thym
Black pepper
Oregano
For the seasoning with the Guanciale
120 g of Tipico IT’s Guanciale
1 Shallot

PREPARATION

First of all, start preparing the yellow cherry tomatoes: take the yellow cherry tomatoes and wash them under running water, then wipe them dry and put them on a chopping board by cutting them in half. Now put your tomatoes on a baking tray covered with baking paper with the side facing up.

Add salt and pepper to taste. At this point, prepare the chopped garlic and thyme: peel a clove of garlic, leaf the thyme and then chop it finely. Once you have the chopped garlic, pour it over each tomato and add the sugar. Add the dried oregano and finally a drizzle of oil. Place in a static oven preheated to 140°C for two hours, until the water has evaporated.

Now go on to prepare the passatelli: in a bowl whisk the eggs for a few minutes and add a pinch of salt; in a larger bowl mix the breadcrumbs and the grated Granetta di vacca. Add the flour, lemon zest and nutmeg. Then add the eggs. Now mix the ingredients and knead until you obtain a consistent and elastic dough. Wrap the dough in cling film and let it rest for about 15 minutes.

In the meantime, boil a pan full of water and on the other side, in a frying pan, fry the shallot with a little oil, then add the chopped guanciale and cook.

When the 15 minutes are up, take out the passatelli dough and pass one piece at a time through a large hole ricer to make passatelli about 4-6 cm long. Drop them onto a floured tray.

Cook the passatelli for a few minutes in plenty of salted water. When they rise to the surface, carefully drain them and pour them into the pan with the guanciale sauce. Then add the yellow tomatoes, which will have cooked in the meantime. Fry everything in the pan without stirring with a spoon, otherwise they will break. Serve directly on the plates with a handful of Granetta di vacca.

PREPARATION

First of all, cut your tomatoes in not very thin slices. Then let the peeled garlic marinate in the olive oil and after 10-15 minutes brush this flavoured oil on your bread slices.

Afterwards, put a slice of tomato on the bread slices and garnish with salt, pepper, oregano and put in the oven at 200°C for 10 minutes.

In the meantime, cut the Mozzarella di Bufala into slices and prepare also the Prosciutto crudo slices.

Once the bread slices are ready, remove them from the oven and put some slices of prosciutto and some of mozzarella, so that thanks to the bread heat they can melt. In the end, garnish with some leaves of basil or arugula and serve them hot.

Ingredients:

250 g of Tipico IT’s 00 Flour
150 g of Tipico IT’s Butter
1 Egg
150 g of Tipico IT's almond flour
150 g of Icing sugar
1 pinch of salt
150 g of Dark chocolate

PREPARATION

Take the almond flour and mix it with the 00 flour. Make a mound with these two ingredients, then add the icing sugar, a pinch of salt and the cold butter cut into cubes. Start kneading mixing well the ingredients, then add the egg and continue until you obtain a soft dough.

Take the dough, wrap it with cling film and pour it in the freezer for at least one hour, until it becomes hard.

After the hour, take the dough, make some little round balls and place them on a tray covered with a sheet of baking paper. Keep in mind to space well the balls.

Once the dough balls are made, place the tray in the fridge for at least one hour. This step is very important because in this way your biscuits will not lose their shape during the cooking. After an hour, put the tray with your biscuits in the oven and bake in static oven at 150°C for the first 5 minutes, then at 120°C for other 5 minutes and finally at 100°C for the final 5-7 minutes.

Once the biscuits become golden, take them out of the oven and let them cool completely down. Now start the filling preparation: take the dark chocolate and start melting it. Subsequently put it in the pastry bag and start filling your biscuits. As you pair them step by step, place them on a tray covered with a sheet of baking paper and let them completely dry. At this point your Baci di Dama are ready to be served.

PREPARATION

First of all, start with the preparation of pesto alla genovese: pour the peeled the garlic in the pestle with some grains of coarse salt, start crushing and when the garlic will have become a paste, add the basil leaves with a pinch of salt. At this point, add the pine nuts and start crushing in order to obtain a cream. Add the Granetta di Vacca step by step which will make everything very creamy. In the end add the extra virgin olive oil, mixing continuously with the pestle.

Mix well all the ingredients in order to obtain a smooth sauce. Then put on the gas a pot full of salted water and when it will have started to boil, let the pasta cook.

Now put the pesto in a large pan and dilute it with some pasta’s cooking water. As soon as the pasta is ready, mix it with the pesto. Mix everything well and your spaghetti are ready to be served with some fresh basil leaves.

1 kg of Mixed minced meat
4 Artichokes
100 g of Tipico IT’s speck
300 g of Tipico IT’s Smoked scamorza
1 Egg

PREPARATION

First of all, start cleaning the artichokes, cut them in thin slices and stir-fry with some oil. Then pour some salt and once cooked, keep them aside.

In a bowl, pour the minced meat and mix it with an egg, the Granetta di vacca, salt and the breadcrumbs, until you obtain a compact mixture.

Subsequently, take a plumcake mould and cover it with some baking paper. Then pour the speck slices so as to cover the entire bottom. A part of them, instead, will have to remain outside, so as to pour on them the minced meat and close the mixture.

Now that you have set the speck slices in the plumcake mould, take the previously prepared mixture of minced meat and pour half of it in the mould, laying it carefully on the set slices. Then pour over the previously prepared artichokes and some slices of smoked scamorza.

Then create another layer in the same way, setting before the meat and then the artichokes with scamorza slices. The last layer will be that of minced meat.

Once you have consumed all the ingredients for making the different layers, lift the speck slices set on the sides of the mould and cover the entire meat mixture in order to enclose it.v

In the end, cover your polpettone with some baking paper and let it cook at 180°C for one hour and half. Once ready, before unmoulding and cutting it, let it cool down.
