200 g of Tipico IT’s Carnaroli Rice
100 g of Fresh asparagus
1 Spring onion
1 tsp of Turmeric in powder
100 g of Tipico IT’s Granetta di vacca
500 ml of Vegetal broth
1/2 Glass of wine
4 tbsp of Tipico IT’s Extra virgin olive oil
Salt
Black pepper

PREPARATION

In order to prepare your risotto, firstly start by cleaning the asparagus and removing the final parts of the stems, that is to say those harder and woody. Cut them into pieces keeping intact the points.

Now bring to boil the vegetal broth and meanwhile cook the asparagus for 5 minutes. Then, collect them with a spatula and keep them aside.

Now, chop finely an onion and put it in a pan with some extra virgin olive oil. When it starts to bown, add the rice and let it toast for 5 minutes, mixing often and then add some salt.

Subsequently, pour some white wine, turn the heat on and let it evaporate. Once the wine will be evaporated, put a teaspoon of turmeric in powder in the vegetal broth and let it melt mixing well.

Cook your risotto pouring a ladle of broth at a time in the rice. When the broth is dried, pour another ladle of it.

When there are 5 minutes to the end of the cooking, add the asparagus, keeping aside their points and mix well.

Let the broth dry and add some Granetta di vacca, mixing well.

Now, serve your risotto with asparagus and turmeric still hot, by garnishing it with the kept aside asparagus points and add some Granetta di vacca.

2 Big potatoes
1 tsp of Vinegar
100 g of Tipico IT’s speck
150 g of Tipico IT’s Smoked scamorza
50 g of Tipico IT’s Granetta di vacca
Salt
Pepper
Parsley
50 g of Butter
1 Egg
Breadcrumbs

PREPARATION

Clean the potatoes, put them in a pan and cover them with some non-salted water. Add a teaspoon of vinegar in order to avoid their breakage during the cooking. Boil them until they are completely cooked checking with a toothpick.

Subsequently, drain and let them cool.

Now, cut the potatoes in two parts and dig them delicately with a corer, leaving 1 cm of border.

Put the pulp in a bowl and press it with a fork. Cut the scamorza and the speck into strips.

Mix the potatoes with an egg, the Granetta di Vacca, some pepper, the melted butter and a pinch of salt.

Subsequently add the scamorza, the speck and the chopped parsley.

Now, drizzle a little olive oil and a pinch of salt on a baking dish and place in the emptied potatoes.

Cover the potatoes with the prepared filling and place a slice of scamorza on each potato, sprinkling with some breadcrumbs. Put a piece of butter on the breading of each potato and let them bake in the hot oven at 180° for 15-20 minutes, until they become golden brown.

Ingredients:

For the chocolate cake
150 g of 70% Dark chocolate
3 Eggs
40 g of Tipico IT’s 00 Flour
150 g of Butter at room temperature
90 g of sugar
1 pinch of salt
1/2 Vanilla pod
For the raspberry coulis
100 g of Icing sugar
2 tbsp of Lemon juice
250 g of Raspberries
For garnishing
Icing sugar
Some raw raspberries and blueberries
Mint leaves

PREPARATION

In order to make your soft-hearted cake, melt in a water bath the dark chocolate with some butter.

Subsequently, in a bowl whip the eggs with the sugar, then add a pinch of salt and the pulp of a half vanilla pod.

Now, add the flour after having sifted it and mix well using the whips.

Sprinkle some flour and grease well the single-portion pastry cutters in aluminium.

Pour the chocolate mixture in the pastry cutters, paying attention to fill them up to ¾ of their capacity.

Now, put the pastry cutters in the pre-heated oven, letting them bake for 14-15 minutes at 190°C.

In the meantime, prepare the raspberry coulis: dry the fruit in a non-stick pan, on a low heat for 2-3 minutes. Then add the icing sugar, the lemon juice and mix with a whip until the mixture amalgamates well. Filter the mixture with a strainer in order to remove any seeds and put the sauce in a bowl letting it cool.

Once cooked, turn out the cakes in the dessert plates, placing them on a raspberry coulis layer, that you will have spread before. Afterwards garnish with some raw raspberries or blueberries, some mint leaves, a sprinkling of icing sugar and serve them immediately in order to guarantee an hot and creamy chocolate heart.

For the fresh pasta
300 g of Tipico IT’s 00 Flour
3 Eggs
For the filling
8 Artichokes
4 tbsp of Tipico IT’s Extra virgin olive oil
60 g of Tipico IT's Granetta di Capra
1 Onion
1/2 Glass of wine
Black pepper
Fine salt
1 Clove of garlic
For seasoning
150 g of Butter
100 g of Tipico IT's Granetta di Capra
50 g of Fresh cream
Pumpkin seeds
Sage

PREPARATION

First of all, start with the preparation of the fresh pasta: pour some 00 flour in a bowl after sifting it. Then add the slightly beaten eggs and start kneading with a fork. When the eggs are absorbed, continue with your hands and transfer the dough on a work surface. Continue kneading it until you obtain a smooth and elastic dough, which will be covered in cling film. Let it rest for about 30 minutes in a fresh place.v

While the fresh egg pasta is resting, start preparing the filling: clean the artichokes, peel and cut them. Chop finely an onion and let it brown on a low flame for about 15 minutes with four spoons of extra virgin olive oil and a clove of garlic. When the onion is golden, add the artichokes and let them cook. Halfway through the cooking time, add the white wine, add some salt and pepper.

Once cooked, transfer the artichokes in a mixer and blend them coarsely. Subsequently, transfer the obtained cream in a bowl and add the ricotta and the grated Granetta di Capra. Mix everything well.v

At this point, start rolling out the dough until you obtain a sheet of pasta dough enough thin. Cut it in strips of 10 cm wide. Put the filling in the centre and close the sheets of pasta dough on themselves. Now start cutting your ravioli and little by little put them on a floured cloth.

Once you have finished, boil them in abundant salted water; while the ravioli are being cooked, melt some butter in a pan and add the sage leaves.

Meanwhile, prepare the Granetta di Capra fondue, on which you will place your ravioli. In a pan, pour some fresh cream and heat it on a medium flame. Add a part of the grated Granetta di Capra and mix well. Add little by little the rest of the Granetta, mixing well and letting it thickened.

When the ravioli are cooked, drain them and sauté them in the aromatised butter.v

Now, place your ravioli on the previously prepared fondue and pour on them the melted butter with some sage leaves, the pumpkin seeds and a handful of Granetta di Capra.

8 tsp of Breadcrumbs
1 tsp of Nutmeg
Tipico IT’s Extra virgin olive oil

10 g of Aromatic herbs

PREPARATION

Wash and peel the cauliflower by clearing each floret and removing their external membrane with the help of a knife until it gets white and cleaned.

Boil and steam your cauliflower florets. Once cooked, drain them well and put them in the potato masher with a spoon.

At this point, collect the puree in a bowl and add the beaten eggs with a pinch of salt and pepper, a bit of nutmeg, the well chopped aromatic herbs and a good handful of Granetta di Capra.

Add also the breadcrumbs and mix well all the ingredients in a homogeneous way. If the dough is still very wet, add little by little some other spoons of breadcrumbs, so that it can be very homogeneous.

Now, with your slightly moist hands, start making the cauliflower balls by flattening them on your hands. Then add a piece of scamorza cut into cubes.

Close and place each cauliflower ball in a tray lined with baking paper, by drizzling the surface with some extra virgin olive oil.

Cook in preheated oven at 200° C for 30 minutes. Serve them hot accompanying with a fresh mixed salad.

For the shortcrust pastry

250 g of Fridge's cold butter
For the cream
1 Egg yolk
500 g of Tipico IT’s Mascarpone
200 g of Pistachio cream
2 tbsp of sugar
For the garnishing
Chopped pistachio

PREPARATION

To prepare the shortcrust: take a large bowl and pour in it two eggs and some sugar. Then add the cold butter cut into cubes and the lemon zest. Start mixing well all the ingredients with your hands and add the flour little by little.

When the dough will have become harder, transfer it on a floured work surface and continue to knead it adding the flour little by little.

When the dough will have become elastic and smooth and it will not be sticking to the hands, it means that your shortcrust pastry is ready. At this point wrap it in cling film and let it rest in fridge for half an hour.v

In the meantime, start the cream preparation: in a bowl, add the mascarpone, an egg yolk, 2 tablespoons of sugar and the pistachio cream. Mix well all the ingredients, so that you can obtain a smooth cream. Afterwards, let your cream rest in the fridge.

After half an hour has passed, take the shortcrust pastry out of the fridge and roll it out in a tart mould. Make your base bake in a ventilated oven at 180°C for 15 minutes. Before baking it, do not forget to put a sheet of baking paper full of dried legumes on it, so that the shortcrust pastry will not swell or shrink. At the end of the baking, let the shortcrust pastry cool completely down before removing it from the mould.

Once the base is cooled, take the previously prepared cream and start spreading it on the prepared shortcrust pastry base.

400 g of Tipico IT’s Yellow cherry tomatoes
350 g of Tipico IT's spaghetti
50 g of Tipico IT’s Granetta di vacca
1 Clove of garlic
Basil
Tipico IT’s Extra virgin olive oil

PREPARATION

Clean and dry the yellow tomatoes, then cut them into pieces and remove their vegetation water.

2

Heat 5 tablespoons of extra virgin olive oil in a large non-stick pan and put the garlic cut in half and deprived ot its core.

Season for some minutes, then add the yellow tomatoes and let them cook on high flame for some minutes.

Add some salt to the tomatoes, dim the flame and let them gently cook for about 10-15 minutes.

Make boil a pot of slightly salted water and, when it will start to boil, cook the pasta. Cook the pasta and drain it when it is "al dente" directly in the pan containing the cooked tomatoes.

In the pan add two or three tablespoons of the pasta cooking water and finish the spaghetti cooking stir-frying them for a couple of minutes.

Add some Granetta di vacca and the fresh basil; stir the pasta and then serve it hot in the dishes.

800 g of Asparagus
500 ml of Vegetable broth
200 ml of Tipico IT's fresh liquid cream
70 g of Tipico IT’s Smoked pancetta

Tipico IT’s Extra virgin olive oil

PREPARATION

Take a pot full of slightly salted water and put it on the gas. When the water will start to boil, deep the asparagus within and let them cook for 5 minutes. Subsequently dry them and put them aside.

In the meantime, chop finely an onion. In a pan put three tablespoons of extra virgin olive oil, the chopped onion and stir-fry for some minutes. The add the previously cooked asparagus, putting aside some tips of them, which you will use to garnish the dish.

Let them cook on a high flame, then add the vegetable broth and continue the cooking for 20 minutes mixing continuously.

Subsequently, switch off the flame, add the fresh liquid cream and a pinch of salt, then blend with an immersion blender until you obtain a homogeneous cream.

Put the cream once again on the flame and let it cook for other 5-10 minutes, so that it can thicken.

Take a non-stick pan and warm it up. Put the pancetta slices on it and the bread croutons, obtained from the bread slices cut previously. Stir-fry everything on a high flame for 10 minutes, so that the pancetta can be roasted and the bread croutons seasoned.

Pour the asparagus cream in the bowls and garnish with crunchy pancetta sprigs, the bread croutons and the asparagus tips that you kept aside.

Serve the asparagus cream hot and creamy with some extra virgin olive oil and if you want with some pepper as well.

For the mascarpone cream
500 g of Tipico IT’s Mascarpone
80 g of sugar
2 Egg yolks
For the garnishing
Fresh mixed fruit

PREPARATION

In order to prepare the fruit tarte, start preparing the shortcrust pastry: pour some flour in a bowl, the icing sugar, the vanilla pod seeds and the cold butter cut into pieces. Knead the ingredients with your hands, until you obtain a sandy mixture, then add the egg yolks and knead again.

When you will have obtained a soft and homogeneous dough, wrap it in some cling film and let it rest in the fridge for 30 minutes.

After these 30 minutes, take the shortcrust pastry out from the fridge and roll it out on a slightly floured worksurface and obtain a circle of about 4 mm of thickness. Raise the dough circle and roll it in the tarte mould. Pierce gently the pastry with a fork and let the base bake in preheated oven at 180°C for 20-25 minutes.

In the meantime, start with the preparation of the mascarpone cream: take a bowl and pour in some mascarpone, two egg yolks and the sugar. Mix everything well with the help of electric whips, so that you can obtain a homogeneous cream.

Subsequently, take your shortcrust pastry base out of the oven and let it cool. Once cooled, transfer the mascarpone cream in a sac à poche and start filling your shortcrust pastry base.

Then, put the cake in the fridge and start cleaning and cutting the fresh fruits. When you will have cut the fruits into thin slices, you can start garnishing your tarte, that you can serve cold.

190 g of Arugula
40 g Pine nuts
Lemon juice
100 ml of Tipico IT’s Extra virgin olive oil
40 g of Tipico IT’s Granetta di vacca

25 g of Almonds in flakes
Lemon zest

PREPARATION

In order to prepare pasta with arugula pesto and lemon, start by cooking and salting the pasta. When it is ready, drain and transfer it in a bowl seasoning it with some oil and let it cool down.

Place the almonds cut into flakes in a baking tray and put it in the oven at 200°C for some minutes, until they become golden.

Now, start with the pesto preparation: in a mixer pour some arugula with the Granetta di vacca, the pine nuts, the salt and the lemon juice. Blend everything adding some oil step by step, making sure that the mixture stays always wet.

Add the obtained pesto to the previously prepared pasta. Then add also the cherry tomatoes, the almonds in flakes and the lemon zest. Your pasta with arugula pesto, lemon and cherry tomatoes is ready to be tasted.
