450 g of Tipico IT's Manitoba flour
60 g of Butter
12 g of Brewer's fresh yeast
240 ml of Water
30 g of sugar
1 Egg
5 g of Honey
1 tbsp of Milk
Tipico IT’s Extra virgin olive oil
Sesame seeds
2 Deloused and skinned trout fillets
1 tbsp of Tipico IT’s Breadcrumbs
1 Tipico IT's Mozzarella fior di latte
1 Boiled potato
Salt
Pepper
1 Teaspoon of aromatic herbs

PREPARATION

First, melt the butter in a small saucepan and set aside. Start preparing the dough for your rolls by taking the Manitoba flour and making a well in the middle. Now pour in an egg, sugar, honey salt, melted butter and yeast. Start to knead well, letting all the ingredients be well incorporated. Continue to knead until you have a smooth dough.

Now grease a fairly large bowl with a little oil and place the dough inside. Lightly grease the surface of the ball and cover with cling film. Let rise for about 2 hours, until doubled.

After the dough has risen, place it on a floured pastry board and divide it into 8 pieces. Knead each piece with your hands to form a ball. Place the balls on a baking tray lined with baking paper, leaving enough space between each one. Cover with a tea towel and leave to rise for two and a half hours until doubled in size.

After the time has elapsed, turn the oven on to 220°C. Brush the surface of the hamburger bun with beaten egg mixed with 1 tablespoon of milk and sprinkle sesame seeds over it.

Bake the hamburger buns in a static oven preheated to 220°C for 5 minutes, then lower the temperature to 180°C and continue for a further 10 minutes, until golden brown.

Once ready, take them out of the oven to cool and cover them with clean tea towels so that they remain soft with their moisture.

Take a blender and place the salmon trout fillets in pieces, the mozzarella cheese in cubes, the boiled potato in pieces, the breadcrumbs, a pinch of salt and ground pepper. Now blend everything.

Next, emulsify the olive oil with the herbs in a dish. Place the pasta cups on the plate and pour in the trout purée.

Heat a grill pan and place the burgers on it, cooking for a couple of minutes on each side, turning gently.

Now your trout burgers are ready to be stuffed into the sandwiches you have prepared earlier and accompanied by other vegetables or sauces according to your taste.

250 ml of Milk
80 g of sugar
150 g of Butter
1 Egg
Lemon zest
10 g of Fresh brewer’s yeast
Icing sugar
Water
Amaretto liqueur

PREPARATION

First, melt the butter and let it cool.

Warm the milk slightly. In a bowl, place the flour, crumbled yeast and sugar and mix together. Gradually add the melted and cooled butter and milk at room temperature, the egg and begin to knead vigorously until the dough is smooth, homogeneous and elastic.

Cover the dough and leave it to rise for about two hours until it has doubled in volume. Deflate the dough with your hands and make a rectangle about half a centimetre thick.

Use soft butter for the filling, so take it out of the fridge at least 2 hours before starting. Brush the entire dough rectangle with butter and sprinkle the surface with plenty of caster sugar. Cut the dough rectangle with butter into 11 strips. Roll each strip and place them in a well-buttered and floured 24cm diameter baking tin. Cover and leave to rise for about 1 hour.

Once the roses cake has risen, brush it with plenty of butter. Bake the roses cake for about 35 minutes in a static oven at 180° until the surface is golden brown.

In the meantime, prepare the alcoholic syrup: put the water in a saucepan, add the sugar and stir with a whisk. Put the water on the heat without bringing it to the boil and continue stirring until the sugar has dissolved. Turn off the heat and add the amaretto liqueur to the syrup; part of it will evaporate immediately due to the heat in the solution.

Stir again, transfer to a small bowl and leave to cool, stirring occasionally before use. Your alcoholic syrup is now ready.

Now take the roses cake out of the oven and leave it to cool completely. Then, with the help of a brush, sprinkle the entire surface of the cake with the previously prepared alcoholic syrup; alternatively, you can dust it with icing sugar.

300 g of 0 Flour
4 Eggs
100 g of Pork loin
100 g of Raw ham
Nutmeg
100 g of Chicken gizzard
100 g of Chicken liver
1 Salsiccia
100 g of Pancetta
150 g of Gran Capra

1 White onion
1 Carrot
4 l of Cold water
Cloves
2 Stalks of celery
1/2 Chicken
Sage
Rosemary
Bay

PREPARATION

To prepare the Agnolini in broth, start with the filling, which will need a long rest. Cut the ham, pork loin, salsiccia, pancetta, chicken gizzard and liver into pieces. Cook with the various aromatic herbs, such as sage, rosemary, bay leaves, cloves, etc. Cook for three hours, basting occasionally with red wine.

Then let the meat mixture cool and and pass it through the meat grinder, using a medium-sized mould and collecting it in a bowl. Add the Gran Capra, salt, pepper and egg to the minced meat. Also add a pinch of grated nutmeg. Mix all the ingredients together by kneading with your hands.

Pass through the mincer again, this time using the thinner mould. Press again with your hands, then cover with cling film and refrigerate for 12 hours. When there are about 4 hours left, prepare the meat broth.

Peel the onion and cut it in half. Place 3 cloves on each half and place them in a hot pan. Wash the celery and carrot well, then cut them into pieces. Put the chicken in a large pan. Add the celery and carrots. When the onions are golden brown, remove them with a fork and transfer them to the pan.

Add water and a pinch of salt. Cook over a medium heat. It will take about 4 hours from boiling. Meanwhile, prepare the egg pasta. Pour the flour onto a pastry board and make a classic fountain shape. Pour in the slightly beaten eggs and start mixing the ingredients with a fork. Knead the dough by hand and continue to knead until a homogeneous dough is obtained. Wrap it in cling film and leave it to rest at room temperature.

Check the stock from time to time and skim it off using a skimmer. Take the egg pasta and transfer it to a pastry board. Crush it with your hands to flatten it, then roll it out with a rolling pin to a very thin sheet. Using a pastry cutter, cut out small squares. Place a bit of filling in the centre of each square. Lift one of the squares, close it to form a triangle and press lightly on the edges. Now lower the two side edges, letting them go around your finger. Seal by pinching the two edges of the dough, and the first agnolino is ready. Do the same for all the others and gradually place them on a tray with a tea towel.

When the broth is ready, remove the meat and vegetables with a skimmer. Transfer to a bowl. Taste the broth and adjust the salt if necessary. Then strain it, dividing the broth into two pots. Bring one of the two broth pots back to the boil and keep the other one warm. As soon as the broth comes to the boil, immerse the lambs. Wait a few minutes until they come to the surface, then use a skimmer to scoop out a portion of the Agnolini and transfer them to a plate. Add the hot broth, taken from the other pot. To make it clearer. At this point, serve with a good handful of Gran Capra.

500 g of Tipico IT's corn flour
2 l of Water
15 g of Tipico IT’s Extra virgin olive oil
1 tbsp of coarse salt
170 g of Tipico IT's Sweet gorgonzola
30 ml of Milk
1 pinch of Nutmeg
30 g of Tipico IT's Bleggio walnuts

PREPARATION

To make the polenta, place a thick-bottomed steel pot on the stove, pour in the two litres of water and when the water is close to boiling add the salt. Then pour in the flour, stirring with a wooden spoon and keep cooking at a high temperature, stirring quickly.

Add the olive oil to prevent lumps from forming, continue stirring until it comes to the boil, then lower the heat to low and continue cooking for 50 minutes over a gentle heat, stirring continuously, taking care not to let it stick to the bottom. After 50 minutes the polenta is ready; turn up the heat so that it comes away from the pan, wait until it comes away from the bottom.

On the other hand, prepare the Gorgonzola fondue removing the rind and cutting the cheese into cubes. Heat the milk until it comes to a boil. Put the Gorgonzola cheese in a thick-bottomed saucepan and turn on the stove over very low heat. As soon as the cheese begins to melt, add the milk. Immediately stir with a whisk to mix it with the cheese.

Cook the Gorgonzola fondue over low heat for 4-5 minutes, stirring constantly so it does not stick to the bottom of the pan. The Gorgonzola should melt completely and the mixture should thicken. Turn off the heat and add the nutmeg.

At this point, take the hot polenta you have already prepared and carefully invert it onto a plate to unmold it.

Next, take the Gorgonzola fondue and pour it over the polenta. Then take the walnuts, chop them finely and use them to garnish your dish. At this point, your polenta with walnuts and Gorgonzola fondue is ready to be served.

300 g of Almond flour
100 g of sugar
300 g of Egg whites
370 g of Icing sugar
2 Packets of vanilla
4 Egg yolks
50 ml of White wine
200 g of Butter at room temperature
50 g of Dark chocolate chips
50 of Finely chopped hazelnuts

PREPARATION

Start by whipping the egg whites with the caster sugar, then add the icing sugar and whip for another minute. Add the almond flour and vanilla, stirring gently.

In the meantime, turn on the oven at 180°C. Pour the mixture into a piping bag with a small nozzle.

On baking paper, form the three 26 cm circles in a tight spiral from the centre. Bake in a ventilated oven for 15 minutes. Then take them out of the oven and leave to cool.

On the other hand, prepare the Zabaglione by beating the egg yolks with the sugar for at least 5 minutes. Add the white wine and place over the heat in a bain-marie.

Continue whipping until it becomes puffy and thick for about 10 minutes.

Next, prepare the cream by creaming the butter with sugar and vanilla.

Compose the cake by spreading half the cream on one disc, add half the chopped chocolate and half the Zabaglione.

Cover with the second disc and repeat, setting aside 1 tablespoon of cream.

Cover with the third disc, spread the remaining spoonful of cream around the edge of the cake and top with chopped hazelnuts.

1 kg of Red potatoes
1 Medium egg
300 g of 00 Flour
Remilled durum wheat semolina
Fine salt
500 g of Squash pulp
15 g of Dried porcini mushrooms
1/2 White onion
150 g of Burratina

PREPARATION

To prepare the gnocchi begin by boiling the potatoes: in a large pot place the potatoes and cover with plenty of cold water. From the moment the water comes to a boil, count about 30-40 minutes, depending on their size. Test them with a fork to see if they are ready, then drain them. Mash the potatoes while they are still hot on the flour that you have sifted on the pastry board and that you have made a fountain. Then add the lightly beaten egg together with a pinch of salt.

Knead everything with your hands until you get a soft but compact dough. Remember that if you knead the gnocchi too much, they will become hard when cooked, so limit yourself to kneading as long as necessary. Take a part of the dough and roll it out with the tips of your fingers to obtain 2 centimetres thick loaves; to do this, flour the pastry board with semolina from time to time. In the meantime, cover the remaining dough with a cloth to prevent it from drying out.

Cut the strands into chunks and, pressing lightly with your thumb, drag them over the gnocchi scratcher to obtain the classic shape. As you prepare the potato dumplings, place them on a tray with a lightly floured cloth, well-spaced out.

In the meantime, soak the dried mushrooms in a saucepan with half a glass of water. Clean the pumpkin and cut it into cubes. Pour 3 tablespoons of oil into a high-sided frying pan and as soon as it starts to heat up, add the thinly sliced onion.

Drain the soaked porcini mushrooms and save the cooking water. When the onion starts to brown, add the diced pumpkin, sauté for a few minutes, add salt and ½ cup of the porcini cooking water. Put the lid on and cook over a low heat.

After about 20 minutes, the pumpkin should be cooked. Add the softened and chopped porcini mushrooms and continue to cook for a few minutes to allow the flavours to meld. Finally, add salt to taste.

Bring the water for the gnocchi to the boil, throw them in and cook them for a few minutes, as soon as they rise to the surface, they are ready. As soon as they rise to the surface, they are ready. Gradually drain them with the aid of a skimmer and place them in the pan with the sauce. Stir-fry for about a minute and then serve, sprinkling the burratina cut into strips on top.

10 Bay leaves

1 Orange

PREPARATION

First of all, clean the anchovies, remove the entrails, head and internal bones and then clean them.

Subsequently, pour plenty of extra virgin olive oil into a large tray and fry the garlic. Once the oil has taken on flavour, remove it and add the breadcrumbs, toast them and then transfer them to a bowl.

Mix the breadcrumbs with the raisins soaked in water, the desalted capers, the grated Granetta di Vacca, the salt, the pine nuts, the sugar and the greated zest of an orange and a lemon.

Mix everything well and add, if necessary, further extra virgin olive oil in order to soften the mixture.

Lay the anchovies and pour on each of them a small part of the mixture. Subsequently, roll the anchovies as a roulade and continue until you finish the ingredients.

Place the anchovies beccafico alla palermitana in a tray altering them with some bay leaves. Then, bathe them with some lemon juice and spread them with the left breadcrumbs.

Finally, bake at 180° for about 15 minutes. Take out of the oven and serve.

150 g of Tipico IT's flour
100 g of Butter
75 g of Water
250 ml of Tipico IT's fresh cream
4 Eggs
500 g of Tipico IT’s Mascarpone
100 g of sugar

PREPARATION

1

In a bowl using a spatula, mix 30 grams of flour with the butter. When the butter has absorbed all the flour, remove the mixture from the bowl, transfer it between two sheets of greaseproof paper and shape the dough into a rectangle about half a centimetre high, using a rolling pin. Refrigerate until needed.

Knead the remaining flour with water and a pinch of salt to a soft dough.

Roll out the dough on a lightly floured pastry board with a rolling pin to form a rectangle. Place the butter mixture in the centre. Flatten it with your hands to the same thickness. Fold in the two ends so that they completely cover the dough, leaving the top and bottom sides open.

Roll out with a rolling pin until you have a rectangle with the short side facing you. Move it so that the long side is on your side. Lift the right short side and fold it towards the centre of the rectangle. Do the same with the left side. Fold the dough in half again to form a sort of book. This is how you have done the "first round" of dough.

Now do the same operation four times. Allow the pastry to rest in the refrigerator for 10 minutes between each round. The puff pastry must rest in the refrigerator for at least 1 hour before being used.

Now, after you've let your puff pastry rest, take it out and cut it into eight small squares. Cut holes in the puff pastry squares and brush the squares with butter, so that the puff pastry pieces don't get too soft during the next stage of filling with cream. Spread sugar on both sides of the puff pastry. Place the puff pastry on a baking tray and bake at 180° for 20 minutes.

Prepare the mascarpone cream by mixing 4 egg yolks and the sugar with an electric whisk. When the mixture is frothy, add the mascarpone until smooth. Finally, add the fresh cream to the cream by mixing the ingredients for three minutes.

Take the sheets out of the oven and let them cool down, then start assembling the mascarpone millefeuille cake: put a first sheet of pastry on a dessert plate, add the prepared filling levelling it with a spatula; put another sheet of pastry and fill it as you did for the first layer and continue in this way until you finish the ingredients. Decorate the last layer of pastry with icing sugar.

PREPARATION

First, start by preparing the sauce. Put the onion in a frying pan with a little oil and brown it. Pour in the tomato pulp, add a glass of water, salt and cook with the lid on low for about 30 minutes. As soon as it is cooked, turn off the heat and leave to cool.

In the meantime, put a pot of water on the stove and bring it to the boil. Season with salt, add the rice and leave it to cook. When cooked, drain the rice and leave it to cool.

Dice the mozzarella. In a bowl, season the rice with the Granetta di Capra and the sauce.

Stir well. Then wet your hands and take some of the rice and flatten it with the palm of your hand. Add small pieces of mozzarella in the centre. Close and roll up trying to shape your arancino.

Continue in this way until you have finished all the ingredients. Then leave them to rest in the fridge for an hour.

When the time is up, prepare a plate with the beaten eggs and another with the breadcrumbs. Take the arancini and dip them in the beaten eggs and then in the breadcrumbs, trying to get the bread to stick to all parts of the arancino.

Put plenty of seed oil in a pan and fry in hot oil, turning them for a perfect frying until golden brown. Drain the rice arancini with tomato and mozzarella on absorbent paper and serve hot.

Pepper
40 g of Tipico IT's Granetta di Capra

PREPARATION

First, start by washing the asparagus, remove their white and hard part of the stem. Then tie the asparagus together and boil them for about 15 minutes. At the end of cooking, drain and cut them into small pieces.

Remove the external leaves of the leek, wash it and cut it into thin slices. Later put the mixture in a pan in which you have previously melted the butter.

Lightly fry the leek, then salt, pepper and add the pieces of asparagus; cook for a few minutes, until the asparagus will no longer lose cooking water. At this point salt, then turn off the fire and let cool the vegetables.

Beat the eggs in a bowl, add the pepper, the grated Granetta di Capra, the lukewarm vegetables, the smoked Scamorza cut into cubes and the parsley; mix the ingredients well.

Using a non-stick pan, put the oil and warm it up, add the egg mixture and cook over high heat for 2-3 minutes, then put a lid on the pan and lower the flame in order to cook the omelette evenly.

When the sides of the omelette will become golden brown, turn the omelette helping you with the lid; brown also the other omelette surface and then let it glide onto a serving plate. Serve your omelette immediately.
