250 g of Flour 00
30 g of sugar
30 g of Lard
1 Small egg
50 g of Marsala wine
10 ml of Vinegar
A pinch of salt
Orange peel
2 g of Cinnamon powder
1 Egg yolk
Peanuts oil
800 g of Tipico IT goat ricotta
320 g of Icing sugar
Candied orange peels
Pistachio grains
Dark chocolate chips

PREPARATION

Sift the flour with the cinnamon into a bowl. Sand the flour by dispersing the lard with your fingertips, add the sugar and grated orange peel.

Mix in the whole egg and continue to knead, adding the salt dissolved in the vinegar and the Marsala wine. You will obtain a consistent and elastic dough. Finish it quickly on the work surface and put it in the fridge for at least 2 hours, before using it.

Roll out a third of the dough at a time, with the pastry sheet or rolling pin, reaching a thickness of 1.5 mm. Using a 10 cm diameter pastry ring, cut out discs that you will stretch slightly to make an oval.

Seal the outer flaps with egg yolk, overlapping them along the centerline of the torch. Cover cannoli ready for frying with plastic wrap, preventing them from drying on the surface, which would compromise the development of bubbles during cooking. Immerse the cannoli in oil at 175°C, seal side down.

Very crumbly bubbles will form on the surface of the cannoli, handle them gently using a perforated ladle. In a few seconds they will be golden brown and ready to drain on frying paper. Wait until they reach room temperature before removing the metal torch.

The scraps of fried puff pastry, in absence of the proper metal torches, can be used to create a “decomposed cannolo” by alternating them with ricotta cream.

For the cream: sift the ricotta well drained from the whey, work it for a minute with electric whips, incorporating the icing sugar.

The cannoli wafers should be filled with the ricotta cream only at the time of serving, using a sac à poche with a smooth 16 mm nozzle or a spatula.

Decorate the ends according to preference: with icing sugar, cherry and orange candied fruit, dark chocolate, chopped pistachios, cinnamon or a mix.

Ingredients:

300 g of Superfine carnaroli rice
1 l of Vegetable broth
30 g of Butter
50 g of Parmigiano Reggiano
5 g of Turmeric
1/2 Golden onion
1 Glass of white wine
1 Apple
60 g of Tipico IT's stracciatella
50 g of Tipico IT's smoked char
50 g of Tipico IT's char eggs

PREPARATION

Peel the onion, chop it up and fry it in a saucepan with a little extra virgin olive oil.

Stir in the rice, toast it and pour in the white wine. Once it has evaporated, add the turmeric and hot vegetable broth.

Meanwhile, cut the apple into small cubes.

Remove the rice from the heat and stir in the Parmigiano Reggiano and the chopped butter. Let it rest for a minute.

Serve the rice in a dish and garnish with stracciatella, char roe, apple cubes and smoked char shreds.

500 g of Tipico IT’s Mascarpone
200 ml of Tipico IT's fresh liquid cream
390 g of Condensed milk
Seasonal fruit

PREPARATION

First, whip the cream to a good consistency.

Cut the fruit into small pieces and blend in a blender to a puree.

Mix the condensed milk and mascarpone with the fruit purée until the mixture is smooth.

Now pour the mixture over the freshly whipped cream and mix well.

Lind the plumcake mould with cling film and pour the fruit cream into the mould.

Place the semifreddo in the freezer overnight.

When it is time to serve, take it out, turn it out onto a serving plate and decorate it with chopped fresh fruit.

Cut your semifreddo into slices and enjoy.

24 Pumpkin flowers
100 g of Tipico IT's Gorgonzola
100 g of grated Parmigiano Reggiano
4 Eggs
400 g of Tipico IT's flour
1 Tablespoon of Tipico IT's extra virgin olive oil
50 g of Butter
1 Bunch of sage

PREPARATION

First, prepare the egg pasta: on a pastry board or in a very large bowl, make a well in the flour and add the eggs in the centre; it is important that the eggs are at room temperature, so remember to take them out of the fridge a few hours beforehand.

Start to knead the dough, taking care not to let the eggs come out of the fountain, mix the dough well and knead it vigorously for at least 10/15 minutes: the dough should be extremely smooth and elastic. Cover the dough with cling film and leave it to rest in the fridge for 30 minutes.

In the meantime, clean the zucchini flowers, remove the stems and pistils, rinse them, dry them and cut them into small pieces.

Chop an onion and put it in a pan with some olive oil and the thinly cut zucchini flowers, stew and add salt and pepper.

Let it to cool. Next add the Gorgonzola cheese. The mixture must be absolutely dry and very compact.

After 30 minutes, you can take the dough out of the fridge and start rolling it out with a rolling pin or, alternatively, with the special machine for rolling out dough into thin sheets.

Using a teaspoon, place the filling on the sheets of pastry you have prepared, forming evenly spaced rows: small portions of the mixture about 3 cm apart, both horizontally and vertically.

When you have finished, cover the sheets with the filling with the plain ones and begin to form the ravioli: using a pastry wheel or a knife, cut each piece and close the edges perfectly, pressing well with your fingers and removing any excess dough. Place each ravioli on a flour-dusted cloth, taking care not to overlap them.

When you will have finished the ravioli, put a pot of water to boil for their cooking and prepare the sauce of the pasta: in a pan melt some butter, put the sage and let the butter get tasty.

When the water boils, drop the ravioli: cook for about 5 minutes (the cooking time will depend on the thickness of your sheets) then drain with a skimmer directly into the pan with the butter, adding also 1 tablespoon of cooking water.

Let it cream well adding some more spoons of grated Parmigiano: in this step rather than turning with a spoon it is advisable to skip the ravioli moving the pan, so as to avoid that they break. Serve, taking care to place a few leaves of sage on each plate.

6 Zucchini
50 g of Butter
300 g of Tipico IT's dry Buffalo Ricotta
150 g of Bread crumbles
Salt
Pepper

PREPARATION

Wash and trim the zucchini. Bring the water to the boil and immerse the zucchini in it for about 10 minutes.

After 10 minutes, take the zucchini out and cut them in half. Use a vegetable brush to hollow out the zucchini and save the flesh.

Place the hollowed-out zucchini on a plate and leave to cool. Now make the filling.

In a bowl, put the butter, the courgette pulp, the grated buffalo ricotta and season with salt and pepper. Mix well with a fork until everything is reduced to a pulp.

Spread the mixture inside the hollowed-out zucchini. Finish with a few knobs of butter and a sprinkling of more dry buffalo ricotta and black pepper.

Bake in a hot ventilated oven at 180° for about 10-15 minutes.

When cooked, take out of the oven and serve!

Risotto with melon and gorgonzola cheese

Ingredients:

300 g of Carnaroli Rice
200 g of Gorgonzola cheese
40 g of Butter
Extra virgin olive oil
Salt
Grated Parmesan cheese
400 g of Melon
100 ml of White wine
1 White onion
Vegetable broth
Pepper

PREPARATION

1

Remove the skin and any seeds from the melon and cut it into fairly small cubes.

2

Peel the onion and chop it finely.

Put the chopped mixture in a saucepan with a drop of extra-virgin olive oil and brown it on a low flame until it wilts. Add the rice and toast it for a few moments, then add the white wine. When the wine has completely evaporated, add about two thirds of the melon and a little vegetable stock.

Close the pot and continue cooking over low heat, stirring often and adding more broth whenever the previous one has been absorbed.

When the risotto is almost cooked, add the melon kept aside.

When cooked, turn off the stove and add the gorgonzola cut into small pieces. Add the butter and stir until all the ingredients are well blended.

Add salt, pepper and grated Parmesan to taste and serve your risotto.

300 ml of Fresh whole milk
1 Bag of vanillin
100 g of Granulated sugar
300 ml of Whipped cream
250 g of Tipico IT’s Mascarpone

PREPARATION

Combine the milk, sugar and vanillin in a saucepan. Stir with a hand whisk and bring to the hob. Heat until it comes to the boil, turn off the heat as soon as it starts to boil and allow to cool to room temperature and then cool in the fridge.

In the meantime, whip the cream with an electric whisk until stiff. Always remember to keep the brick of cream in the fridge for at least three hours, especially in summer, before whipping it. Set it aside and keep it in the fridge.

Add the mascarpone to the milk and sugar mixture after it has cooled. Use a hand or electric whisk: it should be perfectly blended, without lumps.

Pour the mixture into a steel bowl or tub or container where you are going to store the ice cream, possibly with a lid. At this point you can add the whipped cream, incorporating it with a spatula gently. Put the bowl in the freezer and after 30 minutes stir it with a hand whisk.

Repeat the step twice: stir, store in the freezer. This will prevent ice from forming in the ice cream. Then store overnight or for at least 8 hours in the freezer before serving the mascarpone ice cream.

3 Abate Pears (600 g)
Lemon zest
30 g of Walnut kernels
Black pepper
Wholemeal multi-grain bread
40 g of Granetta di Capra
Fine salt
100 g of Sweet Gorgonzola
2 Eggs
Seed oil
Rosemary

PREPARATION

1

First of all, take the multi-grain loaf and remove the crust; cut the breadcrumbs into pieces, place them in a blender and reduce them to a fine powder.

Next, clean the Abate pears: peel them, cut them in half and remove the seeds and core.

Grate the pears with a fine-meshed grater and collect the pulp in a colander. Mash with the back of a spoon to remove most of the water, then squeeze the pulp further with your hands until you have a dry ball.

Transfer the pulp to a bowl and add the grated zest of one lemon, the Granetta di Capra, salt and pepper.

Chop up the walnuts using the mixer and add them to the rest of the ingredients. Add the previously chopped breadcrumbs.

Knead everything by hand to obtain a fairly compact mixture. Take a small portion of the dough, round it off between the palms of your hands, then crush it in the centre to create a little pocket to fill with a teaspoon of sweet Gorgonzola.

Seal each ball to incorporate the cheese, using a little more dough if necessary. Shape each ball into a round shape by rolling it between your palms and continue in this way until you have finished all the ingredients.

Now set the cheese balls aside and prepare the breadcrumbs: beat the eggs with a pinch of salt.

Still in the mixer, place the bread crust kept aside and blend it finely. Then, transfer it to a bowl and season with chopped rosemary.

Dip each meatball in the beaten eggs and then in the rosemary breadcrumbs. Arrange the meatballs on the tray as they are ready.

Heat plenty of seed oil in a pan and when it is hot, fry your meatballs. Then drain them on absorbent paper and enjoy them on their own or with a salad.

200 g of Tipico IT's semolina flour
50 g of Spinach
2 Eggs
1 pinch of salt
450 g of Tipico IT's stracciatella
50 g of Tipico IT's Granetta di Capra
Black pepper
Butter

PREPARATION

Boil the spinach in salted water, then drain and squeeze it well to chop it finely.

Make a flour fountain and add the eggs, the chopped spinach, 2 tablespoons of olive oil, a pinch of salt and mix well as soon as the pasta will be smooth and elastic.

Now roll out a thin sheet of pasta dough and use a teaspoon to sprinkle in the Stracciatella, black pepper and a little bit of Granetta di Capra, which will form the filling of your ravioli. Then cover with a second sheet of pasta dough.

Now cut out the ravioli and cook them in boiling salted water. Then toss them in a pan with butter.

Your green ravioli are ready, serve hot with a final touch of more Stracciatella and a handful of Granetta di Capra.

Ingredients:

100 g of chocolate chips
12 kg of Tipico IT's goat ricotta cheese
50 g of candied orange
630 g of Icing sugar
1 Eggs
350 g of sugar
1/2 small glass of maraschino
300 g of Tipico IT's flour 00
1 pinch of fine salt
150 ml of Water
1/2 lemon peel
Mixed candied fruit
200 g of marzipan
20 g of pistachio paste
1 egg white
Vanilla icing sugar

PREPARATION

Start preparing the Sicilian cassata the day before serving it. Make a classic sponge cake, bake it in a rectangular baking tin and leave it to cool.

Next, drain the goat ricotta in a colander and mix it in a bowl with the vanilla icing sugar: cover the bowl with cling film and refrigerate overnight.

The next day, sieve the ricotta twice until you obtain a smooth and soft cream. At this point, add the chocolate chips to the cream and place the resulting filling in the refrigerator in a bowl covered with cling film.

Prepare the green marzipan by kneading the marzipan together with the pistachio paste, dusting the work surface with a little icing sugar.

Roll out the marzipan into a sheet, cut it in half lengthways and cut out trapezoid-shaped pieces of dough. For the cassata, use a special round one with flared edges about 5 cm high and slightly raised bottom.

Cut the sponge cake into strips at least 6 cm high and cut them into trapezoids. Dust the cake tin very well with icing sugar and then line the edges alternating the trapezoids of sponge cake with those of green marzipan.

Once the entire perimeter of the cake tin has been completed, you can lay the bottom with the spongy part down. Now, prepare a syrup to moisten the sponge cake: dissolve 50 g of sugar in 150 ml of water, together with the zest of half a lemon and half a small glass of maraschino and let it cool. Then pour the cream over the sponge cake.

Now you can fill the base with the ricotta cream, which you will level with a spatula. Then cover with cling film and refrigerate for at least two to three hours.

When the cassata is firm and the fragrances are mixed, turn it upside down onto a plate and prepare a fondant glaze by putting the icing sugar in a saucepan together with a little water, as much as is needed to obtain a creamy and still white mixture. As soon as it comes to the boil, the fondant is ready to be poured into the centre of the cassata and spread with a spatula. Do the same on the sides of the cassata.

You can now decorate your cassata with the candied fruit at your disposal, alternating the various colours. The final touch will be given by the decoration with royal icing, which you will make by beating an egg white until stiff and adding icing sugar a little at a time until you obtain a very dense consistency. Using a pastry bag with a rather thin nozzle, create decorations both on the fruit and on the edges of the cassata, to make it even richer and sumptuous. Now your magnificent Sicilian cassata is ready to be enjoyed.
