The Mantuan Mostarda
The origin of the Mantuan Mostarda dates back to the Middle Age, in this period the Mostarda was a luxurious speciality because sugar, an essential ingredient in its making, had a higher non-sustainable cost. A consequence of this was the fact that it was mainly consumed amongst the bourgeois for example the Gonzagas, Mantuan ruling family at that period and some other famous carachters like Andrea Mantegna and Isabella D'Este.
The name Mostarda comes from the latin name: Mustum Ardens which means spicy juice, the first ingredients were grape juice and mustard grains flour that were manually shredded. The grape juice was later replaced by sugar, when it became an ingredient which cost was widely accessible. For this reason, centuries later, the Mostarda was more famous among lower classes but other than that also because of the long period of conservation of the Mostarda during colder times.
The most famous flavour of Mostarda Mantovana is Apples, some variants are Tiny bell Apples and Quinces.
Today the Mostarda is a pillar of the Mantuan Gastronomy that consists in a bittersweet dressing made of pieces of candied fruits and mustard essence and today it is especially consumed with cheeses, meats and as filling for the famous Mantuan Pumpkin Tortelli.
